This week's Inspiration All Around Us challenge features a beautiful horse standing in a field. The horse is so magnificent, but the wire fence seemed too jarring, so I took it out. You can see the reference photo here.

The way you left the eyes area intact (I guess?) and then painted over most of the rest is really cool, same with the dog one. Makes it look so surreal. I am really really liking these, Christine, and I can see why you're hooked on it! If I had the drive to follow through to learn this I'm sure I'd get hooked myself. :)
Camille, I encourage you to try your hand at digital art if you have a free moment. I have a good feeling your expressive, colorful style would translate very well digitally!
As for the eyes in these recent pieces, it mostly comes down to a simple, carefully-placed white highlight in the eyeballs.
